messy monday on tuesday




here is what we had for dinner tonight. one of my new "go to" sides is a mix of sweet potatoes and russet. toss with olive oil, salt, and pepper and let them go in the oven for about 35 minutes on 400. also prepared the roast in the oven instead of the crock pot today. i browned it with a little red wine that we had left over and then made a broth with garlic, onion, and water. it was delish and very tender. cheeks loved the spinach. her palate cracks me up. she just loves healthy options. it makes a mother smile. the bread loaf was one i picked up in the deli at the market. i have found that if i can get my meat going early in the day the rest of the meal comes together really quickly. what is your hardest obstacle to overcome when making a meal?

the cookies greeted the kids when we got home from school...needless to say the cookies might explain the loss of appetite the boys had at dinner.

This looks really good. Haven't thought about mixing sweet/russet potatoes, wonder if my kids would like that? May try that soon. My biggest obstacle is deciding on any kind of menu. It literally would take me HOURS to do a 2 week menu, I have no idea why it is so hard for me. So usually I just don't do a menu, but then I'm struggling at 4:00 with what to make1 I need to discipline myself I think to go back to making a menu, much as I hate it!

It looks yummy! I love sweet potatos and russets! This is one of my favorite Market Day items! From freezer to oven in 30 minutes! My biggest obstacle in meal prep comes at 6pm, when I decide what I took out at 6am to thaw doesn't sound good anymore! Despite having no children, I am the picky eater in the house!

My hardest obstacle is getting homework done and getting dinner ready after working! I need more easy to prepare or crockpot recipes if you have any post them for those of us that lack some time to prepare a home cooked meal each night! That meal looks yummy and I too will have to try mixing the taters.
