crockpot chicken with chipotle rice

here is the recipe that i used for the rice tonight. i didn't have the soy oil so i totally left it out. it was still delish. really good, almost as good as chipotle.
this morning i threw some chicken breasts in the crock pot with some water and this packet of seasoning, which was free at kroger a couple of weeks ago. it was falling apart tender juiciness when i took it out to shred and add to the rice tonight. super easy and very yummy.
WARNING...do not judge this dish by its lack of color. a single color palette on a plate can be delicious too. this was really yummy. i highly recommend one color meals every now and then.

cooked the rice with the above recipe. shredded the chicken, stirred the two together and it was a very simple yummy meal. let me know if you try it.

teach them well

most momma's get excited about a home run or a lead in the ballet but my heart filled with joy when my little cheeks brought her new pottery bowl creation out to the kitchen to show me her polishes organized neatly in the bowl. she said, "do you like my organization momma?" and momma said "oh yes sweet cheeks, I love your organization."

btw...i get excited about a home run and a lead in the ballet but you know how i feel about organization:)

todays finds

these were $1.50 each...a steal considering they were $5 a piece at the estate sale i was at earlier today. i don't know if you can tell but the one on the right has a purplish tone to it. it is really pretty.
always love these for extra storage bins.
this little beauty will be on ebay to pay for the purchases at the yard sale. it is southern living and i paid $3 for the hanging basket and the door hanger.

these are all yard sale finds. hit a random one today after leaving an estate sale. found nothing at the estate sale, found lots at the yard sale. did you find anything today?

thoughts on the toliet

not literally...i was not on the toilet when this thought came to me, on the contrary, i was cleaning a toilet. i decided today that there is nothing that grosses me out more than cleaning a toilet. i know it's my family's fecal matter but it's still fecal matter. i think this might be a chore that is soon taught to the children. after all we all have to contribute around here. i make pico, they clean toilets. sounds like a good trade off to me. what chore is one that you might hand off to the little ones or a big one soon?

wednesday morning pico

i was given a large box to tomatoes so pico seemed like a reasonable option. i boiled the tomatoes to remove the skins. it is a SUPER easy way to get the skins off and requires very little effort.
after the tomatoes boiled for @ 10 minutes the skin started to crack and lift off. that is when you know they are ready to peel.
here are the peeled tomatoes. to speed up the process of cooling them i ran cold water over them and added some ice to the stock pot.
i cut them lengthwise to remove the seeds.
here is the onion and jalapeno puree that i used to mix with the chopped tomatoes. all vegetables for the pico were chopped in the food processor.

here is the final result. 12 jars of pico. that should hold us for a while. if you have a good pico recipe i would love to have it. please feel free to leave it in the comments.

messy monday on tuesday




here is what we had for dinner tonight. one of my new "go to" sides is a mix of sweet potatoes and russet. toss with olive oil, salt, and pepper and let them go in the oven for about 35 minutes on 400. also prepared the roast in the oven instead of the crock pot today. i browned it with a little red wine that we had left over and then made a broth with garlic, onion, and water. it was delish and very tender. cheeks loved the spinach. her palate cracks me up. she just loves healthy options. it makes a mother smile. the bread loaf was one i picked up in the deli at the market. i have found that if i can get my meat going early in the day the rest of the meal comes together really quickly. what is your hardest obstacle to overcome when making a meal?

the cookies greeted the kids when we got home from school...needless to say the cookies might explain the loss of appetite the boys had at dinner.

teacher love



thrifting tuesday starts today. here are the back to school gifts that we made for dub and cheek's teachers. they had a great first day of school. we found all of the items except the ribbon at the dollar tree. thought these would add a little smile to their sweet teacher's faces. total amount spent per gift $5.50.

fall lineup

i know that i have been a very absent blogger this summer. my plan for the fall line up is to post on certain topics each day of the week to create some sort of consistency and heighten your expectation of what each day will be(i know you are on the edge of you seat:). here is what i have come up with so far and what i already know about this ever evolving blog.
  • i have the best intentions to keep posting on certain topics and then my brain forgets the topics that were so important to me on the day that i decided to run a series entitled...you name it...the list goes on and on.

  • there are several things that i really enjoying doing so those things will be covered once a week...i will share those in a minute after i get out what i am thinking about RIGHT now.

  • i am certain that i will never be famous for my blog, my writing, or my whit, but for whatever reason i really enjoy knowing that there are a few people all over the country that like to occasionally check in.

  • i would like to have more dialog with those of you that do read the domestic chick about life, what your hobbies are, your likes and dislikes, and showcase some of your talent. i love to receive pictures of things that you have done in your own home or found in the back corner of a thrift shop.

so here are my ideas...

Messy Monday finding ways to mess up the kitchen and fill five bellies

Thrifting Tuesday sharing the must haves and good deals i have found during the week from grocery stores to groupon...so many deals to be had so much money to save

Working Wednesday gardening, organizing, cleaning, and other general work that is done around the suburban farmhouse

Thursday Thoughts this is where you will get the emotions, weird thoughts, thankful heart, treasured moments, all of the things that used to drive me crazy about my mother...but each day i live i realize...with a heavy heart...i'm (a little) like her

Friday Finds i will showcase anything that i find at yard sales, in the trash, at thrift shops, etc.

Sew Saturday crafting and sewing projects will be explained and shared

Sunday Surprise this day will just be a surprise and it may be a nothing day too, you will just have to be surprised

what do you think? anything else you would like to see included? i'm open for suggestions none of these are set in stone, in fact they are really moldable and pliable. i'm really trying to be that kind of girl...that real care free kind of fly by the seat of your pants girl in a real control freak shell. i'll let you know how its going in a couple of days. until then i'm sure i will experience quite a bit of internal turmoil.

this fancy schmancy schedule will start next week, August 23, just in case you are wondering...until then i will continue in my blogger slothfulness. i will be checking comments in the meantime and i will probably respond too:)
