onions

talk about bittersweet. onions, i love them in recipes, in salads, on sandwiches, etc. but i HATE cutting onions. they make my cry, even though i take out the core, they smell up the kitchen, and it takes so much time when trying to quickly whip something together. so here is my solution. you all have probably already thought of this. i am a little slow on things. i buy a bag of onions, cut the entire bag at once, and wipe mascara off my face for approximately 40 minutes or so, slight exaggeration. after i chop all the onions, i put them in a glass pyrex bowl and place them in the freezer. then whenever i need a small amount of onions for a recipe, out comes the bowl. i scoop a little out and wha-la, no onion chopping, no running mascara, oh the joy! put the bowl back in freezer and there is plenty more for later.

they sell those things at bed bath and beyond for slicing onions. how ridiculous is that:)

What you need is a zyliss chopper. From a person who cooks with onions practically everyday, trust me, it's a great (and cheap) investment. I'm still trying to catch up on your blog. Gracie had told me about Walton yesterday and was so excited. We'll have to talk later about couponing, prayer mtg, open house, and a book your family/kids need to read.

I have heard if you put the onion in the freezer prior to chopping you won't get any tears! I also chop all onions at once in my mini food processor and put the chopped onion (amount equal to a small onion, as most recipes call for a small onion) in a small ziplock snack size bag and then head to the freezer as needed for a bag! I do the same with ground beef and ground turkey as then I only have to clean the greasy mess up once!
